    Nowadays, meat is much leaner than it used to be. 100 g of pork loin contains on average only 2 g of fat, which is much less than there is in a fried soya cutlet. It is mainly batters and sauces that are highly calorific, as well as some parts of meat, such as skin (mainly duck breast with skin). However, fat-free meat would not be tasty, since it is the fat that carries the aroma. The most delicious meat is one with tiny fat lines running through it, which, surprisingly, are not really calorific. It is still recommended to trim off any chunks of fat on the sides. Remember that if you want to have a slim figure and a healthy heart, you have to exercise a lot and follow a balanced diet. If your diet includes appropriate amounts of fish, fruits and vegetables, as well as fibre, you can consume lean meat four times a week with no regrets.

    The nutritional value of meat and health quality

    To meet the nutritional requirements, food producers give the products new attractive forms, shapes, sensory and functional features. They also enrich products with some substances and remove others to meet the expectations of consumers. When composing his/her diet a modern human being has a choice of various foodstuffs. One of the basic food groups is meat and meat products.

    Meat and meat products are the primary source of protein of high nutritional value, they contain nutritious proteins with  all the essential amino acids.
    The proteins of connective tissue (collagen), however, have a lower biological value. The protein content in pork stands at the level of 15-20%, while the fat content fluctuates within very wide limits, depending on the type of a muscle and the type of a product. Meat fat is characterized by a large proportion of long-chain saturated fatty acids and a small amount of NNKT (essential unsaturated fatty acids), it contains cholesterol with its highest level in the liver and kidneys. Meat as well as offal provide a lot of minerals and especially large quantities of well absorbed iron, zinc and copper. Greater amounts of B-group vitamins are present in the meat . A good source of fat-soluble vitamins A, D and K is the liver, in which the vitamins are stored.
    Not only the content per 100g but also a lot of chemical and biological parameters determine the importance of the individual foodstuffs as a source of protein, fat, carbohydrates, minerals and vitamins to an organism.
    The actual nutritional value of products depends on the way of  storage and the storage conditions, as well as the method of preparation for consumption, in particular thermal treatment. From a medical point of view, the most appropriate method of culinary processing of meat is boiling in a little amount of  water or stewing.

    The main source of nutrition information is the label of the product, which contains clear, useful information that facilitates making consumer decisions. We can read a lot of information essential for healthy nutrition from the label placed on the product.  The voluntary system of labeling with the GDA value (Guideline Daily Amounts) is helpful in this, and it includes information about the total energy content of a diet and nutrients that should be consumed per day by an average, healthy consumer. Placing the nutritional value on the label is to be the tool used to fight against obesity and influence the public health improvement.

    Physical activity makes the human joints stronger and contributes to the bone density increase. That would help humans avoid osteoporosis problems in the future. Physical activity regulates blood pressure and reduces the level of bad cholesterol.It improves heart efficiency and improves blood flow in the body organs. As a result, the organism is better oxygenated and equipped with nutrient elements.
